Mole porchetta

"I used a regular pre packaged pork loin from Jewel, cut it lengthwise twice opening it up. Covered with plastic and pounded to an even thickness. I applied a light coating of whole grain mustard. Then I added a layer of roasted poblano peppers. Topped with a mushroom duexelle. (Mushrooms sautéed with salt & pepper and cream thickened with roux). Then a layer of roasted red peppers rolled and tied.


Now at this point it is usually wrapped with an additional pork product. Either pork belly or bacon. Seared and roasted or smoked. The Mole is just a traditional recipe I like but you can use prepackaged mole found at jewel if you choose."
