Slider Ingredients:
12oz ground pork
12oz ground beef
1/2 cup minced yellow onion
1 tbsp garlic, pureed
1 tbsp ginger, minced
1 tbsp chili paste
3 tbsp soy sauce
1 tbsp lemon grass puree
3 tbsp green onions, thinly sliced
1 tbsp salt
1/2 cup sweet Thai chili sauce
Slider buns (1 bun for every 2 sliders)
Slaw Ingredients:
1/4 head cabbage, shredded
1/2 cup of carrots, shredded
1/2 cup of pea pods, shredded or julienned
1/4 cup green onions, sliced
1/4 cup cilantro, chopped
1/4 cup rice vinegar
2 tbsp sesame oil
For the slaw, mix first five ingredients together in a large bowl. Wisk vinegar and oil together then combine with slaw. For crisper slaw wait until just before serving to combine dressing with dry ingredients.
For the sliders, mix the pork, beef, yellow onion, garlic, ginger, chili paste, soy sauce, lemon grass puree, green onions, and salt in a bowl and mix to fully combine. Portion into slider patties that are about 1/2" thick and approximately 3/4" diameter wider than slider bun (as they will shrink when cooked). Grill the patties on high heat until cooked through, 2-3 minutes per side. After flipping during brush cooked side with sweet Thai chili sauce. Toast each bun half on the grill. Place one toasted bun half on a plate and top with one patty. Top patty with Asian slaw!
