Ingredients:
Shredded Chicken
EVOO
Enchilada Sauce
White diced onion
Chicken stock
Bay leaves
Bread slices
Garlic Herb Butter
Fresh Sliced Cilantro
Shredded Oaxaca Cheese

Grill chicken and soften onions and EVOO on a cast iron over the grill. Throw in cilantro and then mix in the bay leaves and enchilada sauce and chicken stock. Transfer to a bowl and then prep cast iron for grilling the grilled cheese sandwiches. Use the garlic herb butter on outside of bread. Scoop some of the mixture and some cheese on inside and grill it up! Dump some of the birria sauce on top and serve!
